Chunky Choc Nut Cookies

100G PLAIN CHOCOLATE
100G BLANCHED HAZELNUTS
115G PURE DAIRY FREE SUNFLOWER
115G SOFT LIGHT BROWN SUGAR
1 SMALL EGG, BEATEN
1 TSP VANILLA ESSENCE
150G SELF-RAISING FLOUR
75G SCOTTISH PORRIDGE OATS
Preheat oven to 180C, Gas Mk4. Coarsely chop the chocolate and the hazelnuts.
Put the Sunflower Pure and sugar in a bowl and cream together with a wooden spoon until soft and fluffy.
Add the egg, vanilla, flour and oats and stir until well mixed. Stir in the chocolate and hazelnuts.
Put 6 large dessertspoonful’s of the mixture well spaced apart on two lined baking sheets.
Bake for 10-12 minutes until well-risen and pale golden brown. Leave to cool on the baking sheets for 5 minutes before lifting onto a wire rack to cool completely.
